How to Cook Vietnamese Crab Noodles (Bun Rieu)

What is Bun Rieu?

Bun Rieu is a traditional dish originated in Northern Vietnam, made with rice noodles, minced crab paste, cooked in a savory stock with pork bones and tomatoes. Most of these ingredients can be found at your local Asian markets, I actually bought them before the whole quarantine in place happened.

The Broth

Blanch the pork bones with vinegar and salt to remove all of the impurities, drain and rinse them well.

Add the bones back into a pot of water, and let it cook for 30 minutes on medium-high heat and occasionally skim off the scum for a clearer broth.

The Rieu

In a glass bowl, mix together 2 cans of minced crab, 3 eggs, and a splash of fish sauce.

Using the microwave, heat the Rieu for 2 minutes and occasionally mix it well. After repeating the process for about 6 minutes, the Rieu should be cooked and solid.

*Remember to set aside about 1/4 of the minced crab for the flavoring.

The Noodles

Boil the rice noodles along with a small tablespoon of vinegar to keep the rice noodles last longer in your fridge. After it is cooked, make sure to drain and rinse in cold water.

Let the noodles sit till it’s dry, otherwise, the leftover water will make the dilute into the broth when served.


The Flavor

In a small pan, heat up 1 tablespoon of olive oil and add the rehydrated shrimps to fry. Once you see the shrimps turn golden, add your tomatoes and leftover minced crab.

After several minutes, add the tofu and fish cake to fry. Lastly, add all of the flavorings into your broth. Remember to deglaze it with some of the broth and let it cook for another twenty minutes.

Season the broth with some sugar for sweetness, chicken powder, and a small spoon of the shrimp paste for extra flavors.


The Garnish

So here are the final garnish to our Rieu noodles. We have some fish paste (mam tom), the Rieu and culantro for toppings.

To serve, put a serving size of noodles into your bowl and warm it up using the broth. Then pour on the fish cake, tofu, and your delicious broth. Top it off with a side of Rieu the herbs, shrimp paste and a squeeze of lime.
